Raw vegetable summer salad with the goodness of pumpkin seeds
Ingredients

Seasonal summer vegetables

Cucumber - 1
-
Kakdi -3
-
Spinach - 50 gm
-
Pui Saag - 50gm
-
Tomato - 4 small cherry tomatoes for garnish and 2 medium sized for dressing
-
Coconut - 50 gm
-
Coriander -3-4 stands
-
Mint - 1 stand
-
Pumpkin seed - 1 handful
Method
- Fine chop all vegetables including the green leafy saag. Grind coconut, 2 tomatoes, coriander and mint in a blender. Add it to all the chopped vegetables. Add Pumpkin seeds and the cherry tomatoes for garnish.
