Replace refined flour noodles with these fresh raw crunchy zucchini noodles. Mixed with the spicy almond dressing it is extremely delicious.


Ingredients

  • Yellow zucchini: 1 cup (grated/peeled into juliennes)
  • Green Zucchini: 1 cup (grated/peeled into juliennes)
  • Carrot: ½ cup (grated/peeled into juliennes)

For dressing

  • Almonds:½ cup
  • Garlic: 4 cloves
  • Kashmiri chili: 1 no
  • Tomatoes: ¼ cup
  • Ginger: 1 inch
  • Chilli flakes: ½ tsp
  • Lime juice: 1 tbsp
  • Rock salt: to taste
  • Jaggery: ½ tsp (optional)

Method

  • Use a spiralizer or a julienne peeler to cut zucchini into long strings or noodle-like.
  • Blend all dressing ingredients into a coarse paste without water.
  • Mix dressing to the zucchini noodles just before eating/ serving.

Eating guide

  • Food group: Vegetables (Raw) and nuts

  • Veggies, when eaten in raw form are your best friends with every meal. Loaded with enzymes and high water content, they aid digestion. They get absorbed easily by the body, providing health at the cellular level. Add them liberally in your daily meals.

  • Rich in fiber, raw veggies are best consumed as a salad.

  • Nuts help to add good fats and fiber to the meal.
