Wholesome Apple Pie

A freshly baked homemade apple pie instantly becomes a comfort food and can cheer you up on a dull day! Traditionally the pastry is made of refined flour, contains dollops of butter and heaps of refined sugar. However, this recipe is the healthier version made using whole wheat flour and jaggery and yet turns out crusty and flavorful. This is a must-try recipe for the holidays!
Ingredients
For the Pie Dough:
- Whole wheat flour: 2.5 cups
- Jaggery powder: 2.5 tbsp
- Rock Salt: 1.5 tbsp
- Coconut butter: 225gm
- Ice-cold water: 10 tbsp
For the Pie Filling:
- Apples: 3
- Lemons: 2
- Cinnamon powder: 1 tbsp
- Nutmeg powder: 1 tbsp (freshly ground)
- Jaggery powder: 1/2 cup
- Unfiltered Apple cider vinegar: 2 tbsp
Method
- In a medium-sized bowl, add flour jaggery, salt & coconut butter. Gradually add the ice water and mix till the dough come together. The dough should be firm and able to hold its shape.
- Divide it into 4 parts and refrigerate overnight.
- Remove the dough from the fridge the next morning and let it thaw for 30 mins.
- Wash and chop the apples with skin.
- In a bowl, add the chopped apples, lemon juice, cinnamon and nutmeg powder and jaggery and mix well till the apples are coated well. Rest this mixture for 30 mins.
- The mixture will leave water. Separate this water and mix it with unfiltered apple cider vinegar.
- Heat the apple water-ACV mixture for 2 mins.
- Add it to the apple chunks and mix well.
- Roll out the pie dough portions with a rolling pin on a floured surface. The thickness and shape can be with reference to a roti.
- Place the rolled dough on the pie dish and place your filling upon it.
- Sandwich this with another rolled dough on top. Seal the edges.
- You may cut four slits on the top pie dough.
- Bake in a preheated oven at 180 C for 30-40 mins.
