Tomato Soup with Basil and Olives

Enjoy this healthier version of classic tomato soup.
Ingredients
- 1 onion, chopped and sprinkled with salt
- 7-8 grated tomatoes
- 4 cloves garlic
- a small bunch of basil chopped
- 7 olives, chopped into circles
- 1 tsp salt or to taste
- ½ tsp black pepper
- ¼ cup of unpolished rice
- ½ tsp red pepper powder
- 1 tsp date paste
Method
- Heat a pot; add the onion and garlic and fry them in their own water for a while, till golden.
- Then add red pepper powder and 1 glass water.
- Add the tomatoes, the black pepper and the date paste.
- Then add the rice and 2-3 more glasses of water.
- Boil till the rice is almost ready.
- Then add olives and finally add the basil and switch off the fire.
