Thai Cucumber & Tomato Salad - quick-to-do raw salad

Ingredients
- ½ white onion
- 1 bunch of fresh parsley
- 4 tomatoes
- 3 cucumbers
- 2 spring onions or shallots
- ½ bunch of mint leaves
- kaffir lime leaves
Dressing
- juice of 1 lemon
- salt
- black pepper
Method
- Chop all the ingredients fine and mix well.
- Prepare the dressing with salt to your taste, and pour it over the salad.
