Sweet and Spicy Plantain Pith Dry Sabzi

Banana stem is a rich source of fibre and helps in weight management. Banana stem is said to be a diuretic and helps the detoxification process of the body. helps to prevent and treat kidney stones. Banana stem juice is beneficial to health as a vegetable overall.

Ingredients

  • Banana stem - one large piece
  • Black Salt- 1 tsp
  • Turmeric powder- 1/4 tsp
  • Powdered palm jaggery- 1 tsp
  • Fresh grated coconut- 4 tsp
  • Curry leaves - 6-7 nos
  • Green chillies- 2 nos finely chopped

Method

  • Preparation
    When you buy the plantain pith from the veggie market, you have to peel off the stem till you obtain a tender inner core white thick layer.

 

  • Method
    1. Now you have to slice the stem horizontally into thin slices, you will notice lots of fiber clinging to the stem. You have to remove all thefiberusing your fingers and continue chopping. Keep the chopped stem immersed in water. Alternatively, you may use chips cuter to slice them
    2. Next heat a heavy bottom pan, once heated add chopped banana stem cubes, add some turmeric powder, palm jaggery, black salt, and some water. Let it cook in simmer or on a low flame
    3. Meanwhile, take the coconut, and green chilly in a mixer and whip to a coarse paste without adding any water. When the banana stem cubes have turned soft, add this coconut plus some curry leaves and mix well, and continue to cook the dish until well cooked and the ingredients are soft before you switch off the flame
    4. Plantain pith sabzi which is anti-oxidant rich is ready to serve.
