Sweet Potato Porridge

An easy pudding or kheer which can be whipped up in a 30 mins. Lighter on the tummy as compared to traditional kheers

Ingredients

  • 2 Medium sweet potatoes
  • 1 cup medium thick coconut milk
  • 10 dates
  • Few strands saffron
  • A pinch of elaichi powder
  • Some raisins for decoration
  • A few sliced pieces of coconut for decoration

Method

  • Soak the dates for 4 hours in water
  • Soak elaichi in warm water for 15 mins
  • Steam the sweet potato until soft
  • Meanwhile, extract coconut milk
  • In a blender, grind the cooled down sweet potato and dates into a smooth paste
  • Now add the coconut milk also and blend
  • Keep a pan on the stove, add the mix, soaked saffron strands and elaichi powder
  • Gently warm on the stove, do not boil.
  • Let it stand for 15 mins to allow for flavours to mix
  • Variation: Same can be done with pumpkin or carrots too
  • This kheer is more digestible as compared to rice or dal based kheers. During festivities, instead of one more grain based dessert, make this instead.
