Sweet Paniyaram β healthful snack

Often struggle to offer a healthy snacking option to your family in the evening! Try making paniyarams! Paniyaram is a traditional south Indian snack, which could be made sweet or savory. Here’s the recipe for making the sweet versions using red rice.
Ingredients
- Whole grain raw red rice: ½ cup
- Fresh coconut:½ cup (grated)
- Jaggery powder:¼ cup
- Elaichi powder:A pinch
- Fresh coconut:¼ cup or less (cut intopieces)
- Cold pressed oil (Coconut oil is preferred)
Method
- Soak the rice overnight.
- Grind it with the grated fresh coconut.
- Add the jaggery powder and elaichi powder.
- Dry toast the coconut on a tava till fragrant.
- Add to the batter.
- Use an appam pan grease lightly with cold-pressed oil
- Drop spoonfuls of batter into each mould.
- Add little more cold-pressed oil and let it cook till golden brown.
- Turn over and let it cook on the other side. Add a few more drops of oil if necessary.
- Enjoy it warm.
Note: Please keep this for special occasions as it is grain-heavy and also higher in oil consumption. If your child is sick or has asthma, skin problems etc, this should be offered in lesser quantity.
