Sweet Potatoes Spinach Salad (Shakarkandi Chaat)

In this recipe sweet potato is combined with fresh spinach, which is available in abundance during the winter season. It's a great way to add on the green leafy vegetable to your meal fusioned with the juicy, naturally-sweet potatoes. A quick, easy-to-do recipe, even along with your kids!


Ingredients

  • Sweet Potatoes: 3
  • Spinach: 15-20 leaves
  • Makhanas or Fox nuts: 4-5
  • Tomatoes: 2

For Dressing

  • Imli chutney: 2-3 tbsp (Optional)
  • Black salt (Kala namak): as per taste
  • Lemon juice: ½ to 1 lemon (as per taste)

Method

  • Roast Sweet potatoes (You can boil too but roasted gives a different flavor)
  • Peel and cut in cubes
  • Clean and wash spinach leaves. Leave in a sieve for water to drain out **
  • Chop finely
  • Chop tomatoes into bite size pieces.
  • Mix all the above ingredients
  • Add the imli chutney,black salt and lemon juice as per your taste
  • Mix well
  • Sprinkle roasted makhanas and serve

** For spinach to be used as salad, best is to wash atleast 1- 2 hour before actual chopping. If you are short of time, just wash in morning and leave in a sieve by the basin. Being winter it won’t wilt away. Use in evening.
