Sambar Masala - homemade, no artificial colors or preservatives!

Most packaged food items are highly processed and loaded with artificial colours and other additives. The commercially available masalas are one such example. Masalas do enhance the flavour of food and are a must have in every kitchen. But instead of using the store bought ones, most of these can be prepared at home. Try this simple, recipe of homemade sambar masala for instance!

Ingredients

  • Urad Dal: 1 tbsp
  • Chana Dal: 2 tbsp
  • Curry leaves: 1/3 cup
  • Fenugreek seeds- 1½ tsp
  • Coriander seeds - ½ cup
  • Cumin seeds: 2 tbsp
  • Dry red chillies: about 15 (can make more or less)
  • Mustard seeds: ½ tbsp
  • Turmeric: ½ tbsp.
  • Black pepper (whole): 1 tbsp
  • Asafoetida: ½ tbsp

Method

  • Pre-heat a pan and add coriander seeds and cumin seeds. Dry roast till aromatic. There will be a slight change in colour too.
  • Take out the roasted seeds in a plate and add dry red chillies to the pan. Roast till they change colour and give out a smoky flavour. Once done, take out in the same plate.
  • Similarly, dry roast all the spices one by one and take out in the plate.
  • Dry roast the dals separately and add to the plate.
  • Allow the spices and the dals to cool down completely.
  • Grind together into a fine powder. Store in an airtight container and use and when required.
