Samak Rice Sandwich - Go Grain-Free

What if you could get to make your own bread to put together a yummy sandwich as a quick snack! The regular bread available in the market is not only made of refined flour, but rising agents and other chemicals are also used to prepare the same. Here’s a recipe to prepare fresh bread, without any wheat/maida!

Layer vegetables of your choice along with chutney and enjoy a filling, healthylicious sandwich!


Ingredients

  • Samak rice (white millet): 2 cups
  • Urad dal (lentils) : 1 cup
  • Channa dal (Gram seeds): 3-4 tsp
  • Methi seeds (Fenugreek seeds): ¼ tsp
  • Imli chutney : 2 tbsp
  • Green chutney: 2 tbsp
  • Vegetables: of choice - cucumber, tomato, onion (sliced)
  • Salad leaves: as desired

Method

Steaming the dal batter into sandwich:

  • Soak samak rice, urad dal, channa dal and methi seedstogether for 6-8 hours.
  • Grind the soaked ingredients to a fine paste.
  • Allow it to ferment for a few hours (If you do not like it to ferment, keep the mix in the refrigerator).
  • Beat the fermented batter nicely with hand or spatula.
  • Take a thali (with borders) or a glass container.
  • Grease it with cold pressed oil well.
  • Pour a thin layer of the batter.
  • Steam for 12-15 minutes.
  • When it looksdone,poke a fork or knife - it should come out clean.
  • Carefully take out the steamed layer and then cut into rectangular pieces. This is your wheat free bread!

Making the sandwich:

  • Layer the sandwich with imli chutney.
  • Place sliced cucumbers, tomatoes, onions and salad leaves.
  • Layer another one with green chutney, put it on top.
  • Hold with a toothpick.

Serve!

  • Millets (like samak rice) are gluten-free, rich in fibre and high on nutritional value. They are a good option to add variety to your meals or when you want to go grain free.
  • Sama Rice can easily replace rice in any preparation be it biryani, pulao, or even a kheer dessert.
  • Can be served to children as a snack.
