Eating from a rainbow coloured platter is a sure way to good health. Beetroot is a vibrant coloured vegetable and is known to provide great nutritional benefits. This spicy dip will help you make it a staple on your dining table.


Ingredients

  • Beetroot: 1 cup (peeled and sliced)
  • Cold-pressed coconut oil: 1 tsp
  • Garlic: 2 cloves
  • Green chillies: 3 tbsp (chopped)
  • Coriander leaves: 1/3 cup (chopped)
  • Cumin: ½ tsp (roasted and powdered)
  • Coriander: ½ tsp (roasted and powdered)
  • Lime juice: 1 tsp
  • Rock salt: to taste

Method

  • Rub cold pressed coconut oil on the beetroot slices, arrange them on a baking tray and bake for around 25-30 minutes at 220° C.
  • You can poke the beet slices with a knife to check if they are soft.
  • Cool the beet slices and blend into a smooth paste with all the ingredients, but reserving 1 tbsp of coriander leaves.
  • Add very little water if needed. Taste to adjust the seasonings.
  • Transfer to a bowl and mix the reserved coriander leaves.

  • The time taken to roast the beetroot will depend on the thickness of the slices.
  • The sweetness of beetroot gets enhanced on roasting so the recipe will require a generous amount of green chilli to get the right taste.
