Desserts are most irresistible and the most damaging to our health. That’s if they are made the usual way, with the usual ingredients like refined sugar, flours, dairy or unhealthy fats.

What if we could have a vegetable based dessert, with healthful nuts and jaggery? What if you don’t have to really stop at one serving? That’s what this halwa is all about.


Ingredients

  • Lauki/ bottle gourd: 1.5 cups(grated)
  • Cashewnuts: ½ cup
  • Almonds: ½ cup
  • Desiccated coconut: 1.5 cup
  • Cardamom: 2 nos(shelled)
  • Jaggery powder: 1.5 cups
  • Almond slivers: for garnish
  • Saffron: few strands

Method

  • Peel and grate lauki.
  • Squeeze the grated lauki to remove the excess water. You will end up with one cup of grated lauki. (add a dash of lime to this extract and drink it)
  • Blend cashewnuts, almonds and cardamom into a dry powder.
  • In a mixing bowl add blended nut powder, desiccated coconut, jaggery powder, grated squeezed lauki.
  • Mix well. Press the mix onto a tray.
  • Sprinkle almond slivers and saffron strands.
  • Place in refrigerator for at least an hour before serving.

Wellcure Tip:

  • Add more nut powder and desiccated coconut if you want a drier texture and would like to cut it in pieces.
  • Add more jaggery if you like it sweeter.

  • Food group: Vegetables and nuts.

  • Veggies are loaded with enzymes and high water content, they aid digestion. They get absorbed easily by the body, providing health at the cellular level. Add them liberally in your daily meals.

  • Nuts with vegetables increasing the satiety index.

  • It's best not to mix different varieties of nuts. So, make it as an occasional treat!
