Ragi masala roti- Dairy-free, gluten-free

Ragi or Finger Millet is a whole grain, which is gluten-free. It is a staple in South India. It is rich in fibre, iron, protein and calcium. Hence, it is highly beneficial for children. It is also very versatile and is used in various recipes as a whole grain or ground into flour. While most gluten-free, flatbread can be difficult to roll, this version uses the method of patting the dough on a banana leaf or plastic sheet, therefore, making it easy to handle.
Ingredients
- Ragi flour: 1 cup
- Water: 1.5 cups
- Fresh Coconut: ¼ cup(grated)
- Onions: ¼ cup(finely chopped, Optional)
- Green chilli: 2 nos(finely chopped)
- Cumin seeds: ¼ Tsp
- Rock salt: to taste
- Oil: to grease the banana leaf/plastic sheet
Method
- Bring to boil the measured water.
- Keep all the ingredients ready.
- Turn off the flame.
- Stir in the ingredients into the boiling water. Mix vigorously to thoroughly mix all the ingredients.
- Cover with a lid. Allow to rest for 20-30 minutes.
- Knead the dough to remove any lumps.
- Divide the dough into equal parts and roll into balls. If you find the dough sticky to handle wet your palms.
- Grease a piece of banana leaf or a plastic sheet with a few drops of oil and flatten the dough with your finger tips.
- Transfer to a hot tawa and cook on both sides.
