Ragi Brownies with Peanut Ganache

This recipe is a vegan n gluten free recipe which is full of nutrition. It contains:

  • - calcium & fibre in the form of Ragi flour
  • - Antioxidants & omega 3 in Flax seeds
  • - proteins & vitamin b -6 in peanut butter

Ingredients

Dry Ingredients

  • Ragi Flour (Finger Millet Flour) – 1 cup
  • Baking powder – 1 tsp
  • Flax seeds powder – 1.5 tbsp
  • Almond Powder - 1/4 cup
  • Cacao powder – 1/4 cup
  • Salt – Pinch
  • Jaggery Powder – 2 tbsp(or honey)
  • Cashew nuts & Walnuts – chopped (1/4 cup)

Wet Ingredients

  • Virgin Coconut oil – 1/2 cup
  • Vanilla extract – 1 tsp

For Peanut Ganache:

  • Peanut Butter – 3 tbsp
  • Cacao Powder - 2 tbsp
  • Coconut oil – 2 tbsp
  • Jaggery Powder - 3 tsp

Method

  1. Make flax meal by soaking powdered flax seeds in 1/4 cup of water for 10 minutes.
  2. Sieve & Mix Ragi flour (finger millet flour) baking powder, cacao powder, salt, jaggery powder
  3. In a separate bowl mix flax meal, coconut oil & Vanilla extract with a whisk, till it becomes fluffy.
  4. Now add and mix dry ingredients with the wet ingredients.
  5. Mix softly by adding water gradually to get a flowing consistency in the batter.
  6. Mix by using cut n fold method & add chopped nuts of your choice
  7. Pour the batter in a greased dish/mould. Bake at 180°C for 20-25 minutes in a preheated oven.
  8. Prepare peanut ganache by mixing all the ingredients. Slightly heat the ingredients using a double boiler & whisk well.
  9. De-mould the brownie cake & ice it with peanut ganache. Cut into pieces & enjoy.
