Want to go off dairy, but can’t resist some of your all-time-favourite dairy based dishes! Punjabi kadhi for instance! This recipe may help you find the solution to your dilemma. In this recipe regular, dairy curd is replaced by peanut curd making it dairy free. Also, oil which only adds on to the toxic and digestive overload of our body, is not required to prepare this tongue-tickling curry!


Ingredients

  • Veggies of your choice: Beans, Carrot, Cauliflower, Tindli (ivy gourd), drumstick, Okra, Suran (Yam), Doodhi (Bottle Gourd): All put together 750 gms
  • Imli (tamarind) or kokkam : A small piece (size of a small lemon)
  • Green chillies: 2
  • Mustard seeds: ½ tsp
  • Coriander seeds: ½ tsp
  • Fenugreek seeds: ½ tsp
  • Red chilli powder: ¼ tsp
  • Ginger powder: ¼ tsp
  • Tumeric powder: ¼ tsp
  • Asafoetida: a pinch
  • Peanut curd: 2 cups
  • Besan: 2 tbsp
  • Water: as needed

Method

  • Clean and cut all the veggies.
  • Steam the veggies till tender. Do not overcook.
  • Mix 2 tbsp of besan in 2 cups of peanut curd and blend it in a mixer.
  • Soak imli (tamarind) or kokkam in water and keep aside.
  • In a pan, roast 3-4 curry leaves, mustard seeds, methi seeds, dry dhaniya seeds and green chilli. Also add about ¼ tsp of turmeric, little asafoetida, and ginger powder to this mix. Once roasted add some water and give it a boil.
  • Add the steamed veggies to the masala mix and boil for another 5 minutes.
  • Add the peanut curd and besan mix paste to the above mix. Allow to simmer for some time.
  • Now add the imli water to the above mixture and allow it to boil for 5 to 10 min.
  • Add salt as per the taste and your Punjabi Kadhi is ready. You could add non-fried palak ke pakode if you like.

Serve the kadhi with rice!

Wellcure Tip: Plan to prepare kadhi a little in advance. Have your peanut curd prepared and stored in fridge a day or two prior to the day you want to prepare kadhi.
