Olan (Pumpkin Stew) - add variety to your plate!

A mildly flavored, stew-style side dish from Kerala. Dairy free.

Ingredients

  • White pumpkin/ash gourd/winter melon: 200gms(peeled, cut into cubes, further sliced)
  • Pumpkin: 150 gms (peeled, cut into cubes, further sliced)
  • Red cow peas (chauli beans): 2 tablespoons (soaked for four hours)
  • Green chilli: 1 no (slit)
  • Curry leaves: 1 sprig
  • Coconut milk: 1 cup
  • Cold pressed Coconut oil: 1 teaspoon
  • Rock salt: to taste

Method

  • Cook the slices of pumpkin with just enough water, salt, slit green chilli, and curry leaves.
  • Cook the red cow peas until soft and add to the cooked pumpkin slices. Slightly mash the cooked vegetables.
  • Add coconut milk and simmer for a couple of minutes taking care not to boil it.
  • Add a teaspoon of cold pressed coconut oil and garnish with curry leaves just before serving.
