Olan (Pumpkin Stew) - add variety to your plate!

A mildly flavored, stew-style side dish from Kerala. Dairy free.
Ingredients
- White pumpkin/ash gourd/winter melon: 200gms(peeled, cut into cubes, further sliced)
- Pumpkin: 150 gms (peeled, cut into cubes, further sliced)
- Red cow peas (chauli beans): 2 tablespoons (soaked for four hours)
- Green chilli: 1 no (slit)
- Curry leaves: 1 sprig
- Coconut milk: 1 cup
- Cold pressed Coconut oil: 1 teaspoon
- Rock salt: to taste
Method
- Cook the slices of pumpkin with just enough water, salt, slit green chilli, and curry leaves.
- Cook the red cow peas until soft and add to the cooked pumpkin slices. Slightly mash the cooked vegetables.
- Add coconut milk and simmer for a couple of minutes taking care not to boil it.
- Add a teaspoon of cold pressed coconut oil and garnish with curry leaves just before serving.

- Can also be enjoyed as a soupy meal.
