Thandai, the traditional Indian drink is often associated with milk as much as with nuts & seeds! What if there was a way of making a dairy-free version of this delicious, creamy drink! Discover an easy way to prepare thandai without any milk! And yes, its tastes equally divine!

Thandai is a cool and refreshing drink prepared with nuts & seedsand flavored with some fragrant spices.

Thandai translates to something that cools, and once you get a taste, you’ll want more of this sweet, nutty drink. It makes you feel cooler and has many other health benefits as well. It also serves an instant energizer.


Ingredients

  • Almonds: 3 tbsp
  • Pista: 2 tbsp
  • Poppy seeds (khus khus): 2 tbsp
  • Melon seeds: ¼ cup
  • Dried rose petals/ rose water: 2 tbsp
  • Fennel seeds (saunf): 1 tbsp
  • Whole black pepper: ½ tsp
  • Green cardamoms: 3 to 4 (husks removed and seeds kept)
  • Saffron (kesar): a pinch (optional)
  • Date Syrup: as per taste (optional)
  • Ice cubes: as required
  • Rose petals or chopped almonds or pistachios: few (for garnish)
  • Almond milk:½-1 glass (optional)

Method

  • In a bowl, take almonds, pistachios, poppy seeds (khus khus), melon seeds, dried rose petals, fennel seeds and black pepper.
  • Add some warm water to soak these ingredients. Cover and keep aside for minimum one to 2 hours. If you use water at room temperature, then you can also keep overnight.
  • After soaking is complete, pour the whole mixture including the soaking water in a grinder or blender jar to make the thandai paste. If you feel water is more, add it bit by bit so that the paste is made with a thick consistency and doesn't become runny. If you feel water is less, add more water to get desired pasty consistency. Do make sure to use a good grinder or blender as the paste should be very fine.
  • Add remaining ingredients - Date Syrup for sweetening, green cardamon seeds,saffron.
  • Blend the mixture to a very fine paste. Transfer to a bowl and keep aside. You can cover and refrigerate if it is not going to be used immediately.

Making Thandai:

  • To prepare Thandai, take about 4 tablespoons of the thandai paste in a glass. Add chilled water. You can make it 50% almond milk and 50% water if desired. Mix well.
  • Sieve the thandai if you prefer a smoother texture.
  • Garnish with rose petals or some chopped almonds or pista.
  • Serve immediately or refrigerate if it is to be consumed later.
