Nippattu is a spicy deep-fried snack from Karnataka which is a perfect tea time snack. it is typically prepared during festival seasons like, deepavali, ganesh chaturthi and even krishna janmashtami. This is made with rice flour. I have used an autolysed rice flour dough to mimic the exact taste of the fried crackers. It's actually better than its deep-fried counterpart because this remains crispy even after a day whereas the fried ones become soft.


Ingredients

  • 1 c rice flour dough
  • 1/4 c roasted gram dal
  • 1/4 c partially roasted peanuts (very slight black dots)
  • Red chilli as per spice needed
  • 1 tbsp sesame seeds
  • 1/4c dry coconut
  • Unrefined salt

Method

  • Coarsely grind peanuts, gram dal and red chilli and keep aside.
  • Mix all the ingredients with the rice flour dough and knead to a soft consistency. Adjust salt accordingly as the dough also has some amount of salt
  • Make lemon sized balls. Wash the hands regularly and make balls if it feels sticky
  • I have used a roti press to make these balls flat. However, one can press using their palm on a plastic sheet.
  • IMPORTANT: The covers are not oiled in this case. I have washed them and removed excess water droplets. Frequently washing the covers and then pressing between them will avoid the tikkis sticking to the cover while removing.
  • Preheat the oven to 180c
  • Line a tray with parchment and arrange the crackers
  • Bake for exactly 13 mins. Keep a watch after 10 mins. It does not have to brown. As they get crispier, the ends of the tikkis will lift up and look dry.
  • Allow it to cool and enjoy the crispy nippattu / crackers
