How to make mealtimes with toddlers easy, healthy and enjoyable? Moong dal congee is an awesome comfort food. Try this with your kids as a meal or beautify it and enhance it into a kheer with roasted nuts as a dessert if needed.

Ingredients

  • Yellow moong dal: ¼ cup
  • Jaggery powder: 1/3 cup
  • Bay leaf: 2 nos
  • Cloves: 2 nos
  • Cashew cream : 3 tbsp

Method

  • Heat a pan and roast moong dal on a low flame until you get a slight nutty aroma without changing the colour too much.
  • Soak the roasted dal for around 2 hours.
  • Cook the dal in enough water along with bay leaves and cloves, to get a smooth mushy cooked dal.
  • Once cooked discard bay leaves and cloves.
  • Mash the dal with the back of a ladle. If you prefer an absolutely non-grainy texture use a hand blender to blend it,
  • Add 1/3 cup of jaggery powder and stir well. Adjust the consistency according to your preference by adding some water if you want to.
  • Stir in cashew cream and serve either hot or cold.

Wellcure tip:

  • The quantity of jaggery can be flexible depending on how sweet you like it.
  • To serve as kheer roast chopped nuts and garnish.
  • Use cardamom to vary the flavor.

Eating guide:

  • Food group: lentils and nuts.
  • Nuts & nut milks are great additions post meals at night time. Easy to combine with other food groups (except fruits).

  • Lentils are a healthy addition to meals for making them filling and are rich in fiber and a good source of proteins as well.
