Ukdiche Modak in Marathi, Thengai Poornam Kozhakattai in Tamil, Kai Kadubu in Kannada, This is the traditional offering to Lord Ganesha for Ganesh Chaturthi in many parts of India. It is usually made with ghee to cook the coconut jaggery filling and rice flour casing. We are making the same modak by skipping the ghee and using Samak flour or Little millet flour in place of rice flour. Here’s wishing all Wellcure patrons a happy Ganesha Chaturthi. Ingredients

Outer casing ingredients

  • Little millet flour: ¾ cup
  • Water: 1 ¼ cups
  • Rock salt: ¼ tsp
  • Cold-pressed coconut oil: 1 tsp

Filling ingredients

  • Fresh coconut: 1cup(grated)
  • Organic jaggery: ½ cup(grated/scraped)
  • Cardamom powder: ½ tsp
  • Water: 2 tbsp

Method

 

  • Pressure cooker bring to boil 1 ¼ cups of water, salt and oil. Measure the little millet flour and keep it ready.
  • Once boiling turn off the flame and quickly mix in the measured flour stirring well.dachshund
  • Close the cooker and place the weight on it and allow to rest for 15-20 mins.
  • While the dough is resting, in a heavy-bottomed pan, place all the ingredients for the filling and cook on slow flame.
  • Stir regularly to make sure it doesn’t burn at the bottom, in about 15 minutes the jaggery would have melted and thickened along with the grated coconut into a thick mixture.
  • Cook long enough to evaporate any excess moisture and you have a halwa like consistency.
  • Open the pressure cooker and knead the dough thoroughly.
  • Grease your palms with coconut oil divide the dough into equal sized balls roughly the size of a lemon.
  • Gently shape the balls into cups and place enough coconut jaggery mixture into the cup and seal to get a modak shape, similar to how we shape momos. You could also use moulds if you have them.
  • Grease a steamer / idli plate and place the shaped modaks on them and steam for around 12-15 minutes.
  • Modaks are ready to be offered as Prasad.

Wellcure tip:

  • We are using a pressure cooker since they are thick bottomed and retain heat for the dough to cook in the retained heat. Placing the weight helps to seal the steam and prevent the dough from getting dry.
  • However it can be made in any utensil of your choice.
  • In case you find it difficult to shape the dough or find it cracking at the edges add a few teaspoons of boiling hot water to the dough and mix.

Eating Guide:

  • Food group: millets and coconut
  • Millets (like sama rice) are gluten-free, rich in fibre and high on nutritional value. They are a good option to add variety to your meals or when you want to go grain free.
  • Coconut is a wholesome nut with umpteen health benefits and hence a great addition to your meal times. Can be easily combined with other food groups.
