Mixed Green Salad with Avocado Dressing

Increasing your daily consumption of raw greens is great way to use nature’s wisdom to ensure health for yourself and your loved ones. Sounds like an uphill task, especially if you have kids around - isn’t it! Salad dressings are certainly a great way to add some creaminess, texture and flavour to your greens and makes the salad kid-friendly as well. This quick to-do, homemade avocado dressing adds the goodness of avocados minus the preservatives, chemicals and colours added in the commercially available options.

Ingredients

For Garden Green Salad

  • Mixed greens: 1/2 cup (Spinach, Rocket, rucola, Red amaranth or any leaves of choice)
  • Iceberg lettuce: 1 cup (chopped)
  • Carrot: 1/4 cup
  • Tomatoes: 1/4 cup (diced or sliced)
  • Green onions: 2 (exclude green portion)
  • Any other veggie of choice
  • Walnuts: a handful
       
  • For Avocado dressing

  • Avocado: 1 (pulp only)
  • Garlic clove: 1-2
  • Coriander leaves: 1/2 cup
  • Green chili: 1
  • Lemon juice: 1 lemon (per taste)
  • Cumin powder: 1 tsp
  • Rock salt and pepper: to taste

Method

  • Add all the ingredients for the Avocado dressing in a blender.

  • Blend well & add a little water to make it smooth and creamy.

  • Taste and adjust salt ,pepper and chilly if needed.

  • Take all the salad ingredients in a bowl.

  • Just before serving, add the Avocado dressing.

  • Toss well and top with walnuts.
