Lauki is one of those vegetables that lend itself to almost any recipe or cuisine and any style of cooking. Here’s an easy five minute recipe to a cold soup with this humble versatile vegetable. Its raw, it’s tasty and its wholesome! Its super quick and uses simple ingredients.


Ingredients

  • Lauki: 1 ½ cup (cubed)
  • Fresh coconut: ¼ cup (grated)
  • Dates: 4 nos (pitted)
  • Lime Juice: 1 tbsp
  • Green chili: a very small piece
  • Celery leaves/coriander leaves: ¼ cup
  • Rock salt: to taste
  • Ice cubes/ cold water: to grind

Method

  • Cut the lauki into cubes. (Use with peel if you prefer to)
  • Blend with all the ingredients, until smooth.
  • Use enough water to get the consistency of soup you like.
  • Serve immediately.

If the ingredients you are using are chilled then you don’t need ice cubes or cold water to blend the soup.
