Green Coriander & Coconut Chutney - a quick side dish to add variety & nutrition

Green coriander and coconut chutney recipe is a refreshing and simple to make chutney. The addition of coriander leaves along with fresh coconut along with green chillies and ginger makes this chutney super delicious. It makes for a delectable accompaniment to many dishes and can even be used as a sandwich spread.
Ingredients
- Fresh grated coconut: ½ cup
- Fresh coriander leaves: ½ cup
- Green chilli: 1 medium (de-seeded and chopped)
- Ginger: a small piece (chopped)
- Cumin seeds: ½ tsp
- Lemon juice: 2 tsp
- Rock salt to taste
Method
- In a mixer, grind together the coconut, coriander leaves, ginger, green chilli, cumin seeds and salt, until the texture of the mix turns smooth.
- Transfer the green coconut and coriander chutney to a serving bowl. Squeeze in some lemon juice and stir well.
- Serve the chutney as a spread over the snacks of your choice.
