While most us are familiar with eating raw carrots, but doesn't it sometimes get boring to have just the carrot sticks for salad! Well! Here’s how to make eating carrots interesting and more fun! All you need is some grated carrot and grated coconut along with basic tempering ingredients. Its that easy and take just about 15 minutes to do!

So this weekend, get your favourite salad bowl out and put together some grated carrots topped with this quick tempering to get a delicious salad! You may want to skip your meal!

Ingredients

  • Carrots: 3-4 medium sized (grated)
  • Coconut: ½ cup (grated)
  • Rock salt: to taste
  • Cold pressed oil: ½ tsp
  • Cumin seeds: ½ tsp
  • Lime juice: ½ tsp
  • Cilantro: ⅓ cup (chopped)

Method

  • Mix chopped cilantro, salt, lime juice, grated carrots in a bowl.
  • For the tempering, heat ½ tsp of cold pressed oil, add cumin seeds and toast.
  • Add ⅓ cup of shredded coconut to the above oil tempering and continue swirling until golden.
  • Allow the tempering to cool down
  • Mix the carrot mix with the above tempering and give it a toss.
  • Healthy carrot coconut salad is ready to be served.
