Golgappa Pani - simple refreshing drink made at home

Golgappa or pani puri or puchka or gupchup... call it what you may, they are available almost everywhere in the country and are always tantalizing to the palette. The most important component of it is the spiced water. Sweet, sour and tangy you can make this homemade version with raw mango and fresh herbs.
Ingredients
- Raw mango: 1/3 cup (peeled and cut into cubes)
- Dates pulp: 2 tbsp (optional)
- Coriander leaves: ½ cup
- Mint leaves: 1/3 cup
- Black salt: to taste
- Cumin powder: 1 tsp
- Green chilli: 1 -2
- Lime: 1 no (optional)
- Water: 4-5 cups
Method
- Blend all the ingredients with very little water to make a paste.
- Add the paste to the water and adjust the seasoning to arrive at the desired level as tanginess.
- Add dates paste if you like a slightly sweetish tinge.
- Add lime juice if you want it more sour or find the mango is not sour enough.
Eating guide:
- Food group: Vegetables and greens. (Raw mangoes fallin the veggie category, once ripe they are fruit category).
- A great refreshing way to stay cool internally in summers and hydrate the body.
- Known to be alkalizing and helps to cleanse the system.
- Can be served with a salad.
