Here’s yet another interesting combination of vegetables. I heard about this combination from my friend Ujwal. Apparently it’s a famous and traditional combination in Western Indian cuisine. It’s a smart idea to mix a sweetish vegetable with a slightly bitter vegetable to balance the taste. I added a twist to it by including some boiled peanuts to make it more wholesome. Cooks in a jiffy!

Ingredients

  • Pumpkin: 1.5 cups (cut into cubes)
  • Gavar: 1 cup (cut into small pieces)
  • Peanuts: ¼ cup (soaked)
  • Turmeric: ¼ tsp
  • Chilli powder: ½ tsp
  • Tamarind pulp: 1 tsp
  • Coriander powder: ½ tsp
  • Cumin powder: ½ tsp
  • Rock salt: to taste
  • Coriander leaves: 1 tbsp (chopped)
  • Cumin Seeds ½ Tsp

Method

  • Soak peanuts for at least 4 hours.
  • Steam pumpkin and gavar until cooked. Gavar takes a little longer so better to steam them separately.
  • Boil the soaked peanuts with salt until cooked.
  • Heat a pan and add cumin seeds, when it is slightly browned add the steamed vegetables, boiled peanuts, spices, salt and tamarind pulp and combine well.
  • Sprinkle a little water and cover and cook for 2 minutes.
  • Serve garnished with coriander leaves. Best eaten with flat breads.
