Drumstick Soup- Dairy-Free

Drumstick is known to have many health benefits, but it is a little difficult to make fussy eaters chew on them, many wouldn’t know how to handle it. It does get messy sometimes. Here’s a flavourful drumstick puree soup that extracts the goodness of the vegetable.
Ingredients
- Drumstick: 3 Sticks (approx: 150 gms)
- Tomatoes: 2 nos
- Garlic: 3 cloves
- Curry leaves: 2 sprigs
- Turmeric: ¼ tsp
- Rock salt: to taste
- Whole black pepper: ½ tsp
- Coriander leaves: for garnish
- Water: 2 cups
Method
- Cut drumsticks into 1 inch bits.
- In a pot place all ingredients other than salt with a cup of water. Cover and simmer for about 10 minutes.
- Check that the drumsticks and tomatoes are well cooked.
- Separate the drumsticks to a container and transfer the rest of the contents to a blender.
- Mash the cooked drumsticks with hands. Add water to the pulp and mash to separate the pulp from the sticks and fiber.
- Add more water to the pulp and mash and squeeze for any residual pulp. Totally using around 1.5 cups of water.
- Blend the drumstick pulp with the contents in the blender.
- Pass it through a soup strainer.
- Add salt to taste and simmer to get a warm soup.
- Serve garnished with coriander leaves.
