Drumstick is known to have many health benefits, but it is a little difficult to make fussy eaters chew on them, many wouldn’t know how to handle it. It does get messy sometimes. Here’s a flavourful drumstick puree soup that extracts the goodness of the vegetable.


Ingredients

  • Drumstick: 3 Sticks (approx: 150 gms)
  • Tomatoes: 2 nos
  • Garlic: 3 cloves
  • Curry leaves: 2 sprigs
  • Turmeric: ¼ tsp
  • Rock salt: to taste
  • Whole black pepper: ½ tsp
  • Coriander leaves: for garnish
  • Water: 2 cups

Method

  • Cut drumsticks into 1 inch bits.
  • In a pot place all ingredients other than salt with a cup of water. Cover and simmer for about 10 minutes.
  • Check that the drumsticks and tomatoes are well cooked.
  • Separate the drumsticks to a container and transfer the rest of the contents to a blender.
  • Mash the cooked drumsticks with hands. Add water to the pulp and mash to separate the pulp from the sticks and fiber.
  • Add more water to the pulp and mash and squeeze for any residual pulp. Totally using around 1.5 cups of water.
  • Blend the drumstick pulp with the contents in the blender.
  • Pass it through a soup strainer.
  • Add salt to taste and simmer to get a warm soup.
  • Serve garnished with coriander leaves.

  • Could be clubbed with a salad of choice.
