Creamy Tomato Cold Soup - Dairy-Free and Raw

Soups are versatile in their usage. Have them piping hot during winter and have them chilled during summer. They are easy to digest and help in giving a digestive break. They serve as an easy way to introduce more vegetables in kid’s meals.
Here’s a quick to make, kid-friendly, dairy free, cold soup your kids will ask for more and more.
What’s more, it’s a raw soup.
Ingredients
- Ripe tomatoes: 2 cups (chopped)
- Garlic: 2 cloves
- Green chilli: ½-1
- Rock salt: to taste
- Coconut milk: 1 cup
- Coriander leaves: 1 tbsp (finely chopped)
Method
- Blend chopped tomatoes, garlic, green chilli.
- Pass it through a soup strainer.
- Mix coconut milk and salt to the tomato puree
- Serve chilled, garnished with coriander leaves.
Eating guide
- Food group: Vegetables & Nuts
- Can be eaten before / along with cooked meals. Best served with a salad for a light lunch.
- Can be used as a welcome drink in summertime parties.
