Creamy Palak Soup - incorporate greens in your diet

Green leafy vegetables like palak are a natural source of essential minerals and vitamins. They also rich in fibre and help curb our craving for salt. Therefore a must add to your diet. Palak can be had in salads, curries, snack etc. Here a quick and simple recipe to make creamy palak soup.


Ingredients

  • Palak (spinach): 2 bunches
  • Cashew paste: ½ cup
  • Tomatoes: ¼ cup (chopped)
  • Rock salt: as per taste
  • Black pepper: as per taste
  • Water: as required

Method

  • Wash the spinach thoroughly and strain the excess water. Chop roughly.
  • Steam the chopped tomatoes and palak and puree them in a blender.
  • Put the tomato-palak puree on flame and give it a boil. Do not overcook.
  • Add water to get the desired consistency.
  • Add the cashew paste.
  • Add salt & pepper as per taste.
