Cream Of Mushroom Soup Without Milk

Making Cream of mushroom soup at home need not be a cumbersome affair. But making the same without using dairy may sound like bit of a challenge. Well! Not any more. You got to try out this recipe to believe how creamy, yummy mushroom soup can be, even when no milk added! Go on discover the secret!
Ingredients
- Mushroom: 250 gms
- Soaked Almonds: 15- 20 pieces
- Green Onions: 2 pieces (Chopped)
- Bay leaf: 1
- Cinnamon stick: 1
- Crushed Pepper : to taste (use more – will taste good)
- Salt : to Taste
Method
- Soak almonds for 1-2 hours (or 4 hours if you have time). This is optional. You can always use the nuts (Almonds, and Cashews, as is in soups).
- Wash the mushrooms well. Dice up.
- Chop the onions, add some salt, and let it sweat (This ways you won’t need oil to fry them).
- Heat the wok.
- Add in the onions, bay leaf, cinnamon stick.
- Add mushrooms when onions brown slightly.
- Cook for 5 minutes.
- When mushrooms are cooked (don’t overcook – let it just release some water), remove bay leaf and the cinnamon stick. Switch off hob.
- Take the soaked almonds, peel away the skin. Wash well.
- Add in a blender with water, and make into a paste.
- Put the mushroom and onions in a blender and blend well.
- Put back on hob.
- Add water for consistency, salt and pepper. Give one boil.
- Garnish with onions leaves.

PS: If running short of time, instead of soaked almonds, can use cashew paste (no soaking needed).
