Cooling Jaggery Sherbet (Paanakam)

Jaggery or Gur ka Sherbetis a traditional drink that can be consumed any time in the day and replenishes your body in the sweltering heat. A quick drink to make, it requires you to mix water and gur until the gur completely dissolves and it develops a light brownish hue, but you can adjust it based on how sweet you want your drink. Add a dash of lemon juicefor some tang and it's done.
Jaggery has always been touted as one of the best substitutes for refined sugar, containing innumerable health benefits. So go ahead and add some sweetness to your day, guilt-free!
Ingredients
- Chopped jaggery: ½ cup
- Water: 2 cups or add as required
- Dry ginger powder: ¼ tsp
- Black pepper powder: ⅛ tsp
- Lemon juice: 2 tsp
- Rock salt: a pinch or to taste
- Edible camphor: 1 pinch (optional)
- Tulsi or basil leaves: a few (optional)
- Ice cubes: few (optional)
Method
- In a bowl, take ½ cup chopped jaggery and 2 cups water. You can add water as required.
- Mix well and let the jaggery soak in water for 30 to 40 min till all of it is dissolved. If there are impurities in the jaggery syrup, then filter the solution.
- Add 2 tsp lemon juice.
- Add ¼ tsp ginger powder, ¼ tsp cardamom powder, ⅛ tsp black pepper powder and a pinch of salt.
- You can also add a pinch of edible camphor (optional).
- Stir and mix the ingredients well.
- Garnish with tulsi or mint leaves and serve chill.

- Jaggery sherbet has a cooling effect on the body and is hence recommended as a summer drink.
- Jaggery is not only a great replacement for refined sugar, but it is also rich in iron and fibre as well. It aids digestion and helps prevent a number of ailments as well!
