Chickpea Gaucomole

This is an awesome and filling dip to have in your fridge for when the urge to munch arises.
Ingredients
- 1 cup boiled chickpeas
- 1 tbsp fresh lemon juice
- 1 clove garlic, crushed
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 4 onions, thinly sliced
- 1 tbsp chopped green chillies
- 1 tbsp seed butter
- salt to taste
- 2 tbsp coriander (optional)
Method
- Place the cooked chickpeas, draining most of the water, in a food processor or blender. (Keep the drained water aside for liquefying if required)
- Add the lemon juice and garlic. Pulse briefly, until the chickpeas are slightly chopped.
- Add the onion and pulse again until the mixture is chunky.
- Place the mixture in a bowl and add the remaining ingredients. Mix well. Cover and chill before serving.
