Here comes a simple tasty and healthy "CHICKPEA CARROT SALAD"

HEALTH BENEFITS-

1. Chickpeas-

As a rich source of vitamins, minerals and fiber, chickpeas may offer a variety of health benefits, such as improving digestion, aiding weight management and reducing the risk of several diseases.

Additionally, chickpeas are high in protein and make an excellent replacement for meat in vegetarian and vegan diets.

2. Carrot-

Carrots are a good source of several vitamins and minerals, especially biotin, potassium, and vitamins A (from beta carotene), K1 (phylloquinone), and B6.

3. Cucumber-

Cucumbers contain antioxidants, including flavonoids and tannins, which prevent the accumulation of harmful free radicals and may reduce the risk of chronic disease.

4. Cashew-

Although cashews are one of the lowest-fiber, highest carbohydrate nuts, they’re packed with vitamins, minerals, and antioxidants. These include vitamin-E, k, and B-6, along with minerals like copper, phosphorus, zinc, magnesium, iron, andselenium, all of which are so important for a variety of bodily function.


Ingredients

 

  1. Soaked and boiled chickpeas 1 cup
  2. 1 chopped onion
  3. 1 chopped tomatoes
  4. 1 chopped cucumber
  5. 1 cup grated carrot
  6. Some roasted peanuts/ channa
  7. 1 chopped green chilly
  8. 10 soaked cashews overnight
  9. Black pepper and pink salt for taste
  10. Half chopped red Bell pepper. 

Method

  1. Put soaked cashew, bell pepper, green chilli, black pepper, pink salt with little water in a grinder mix all the ingredients and make a pureeout of it. Keep it aside for a while.
  2. Now mix all the vegetables together with boiled chickpeas, cucumber, grated carrot, onions and tomatoes now mix the salad sauce prepared with creamy cashews and add peanuts.
  3. Mix all the preparations and the Creamy chickpeas carrot salad is ready to serve.
