Tabbouleh is a middle eastern delicacy made of soaked broken wheat and a mix of herbs garlic tomatoes and a lime dressing.
Try this cauliflower tabbouleh without wheat. Juicy and delectable. You’ll love it.
Ingredients
- Cauliflower: 1 cup (grated)
- Tomato: ¼ cup (cubes)
- Mint: ¼ cup (chopped)
- Coriander: ¼ cup (chopped)
- Cucumber: ¼ cup (cubes)
- Cumin powder: ¼ tsp
- Lime juice: 1 tbsp
- Garlic: 2 cloves
- Rock salt: to taste
- Pumpkin seeds: 1 tbsp
Method
- Crush garlic, mix with lime juice and salt to prepare the dressing.
- Mix all other ingredients together and serve by adding the dressing just before serving/eating.

- Use parsley in place of coriander.
- You can also add cashew cream as a dressing.
