Carrot & Ginger Soup

Servings: 6-8 Servings

Ingredients

  • 1 onion, chopped
  • 750 gm carrots, peeled and diced
  • 1 tsp fresh ginger, grated
  • 2 tsp coriander seeds, crushed
  • 4 cups vegetable stock or water
  • Rock salt and pepper to taste
  • Fresh coriander or parsley to garnish
  • 1/4 cupcoconut milk

Method

  • Saute the onions in a hot pan for about 5 minutes until transparent. If they stick, add a little water.
  • Add the carrots, ginger, and crushed coriander seeds and stir on medium heat for 5 minutes.
  • Add the stock or water and bring to a boil. Cover and cook until the carrots are tender.
  • Purée the soup in a blender and then strain through a sieve.
  • Reheat the soup and season with salt and pepper.
  • Ladle into bowls, and place a spoonful of coconut milk on each bowl and garnish with coriander or parsley.
