Buttermilk sambar in karnataka also called Majjige Huli Recipe is a traditional South Indian recipe, a must for functions and festivals. It is a tangy curry made from buttermilk and coconut. This is a recipe that uses plant based curd. This curry is usually made with water based vegetables like cucumber, white pumpkin, squash or snake guard. Okra is also a great vegetable that goes well in Majjige Huli. Amaranthus greens also heightens the flavour of this dish.It is an authentic Karnataka recipe and you can find similar recipes across the south of India. Some make this recipe spicy and some make it less spicy with fewer ingredients. This can be relished with whole cooked rice and millets as a main dish. It can also be enjoyed with ragi balls as a dip.
Ingredients
Karnataka style Majjige Huli ingredients

1/2 cup channa dal

1/2 cupfresh coconut

1/4 cup coriander
-
1 inch fresh ginger
-
2-3 green chilli
-
1/2 tsp turmeric
-
2 tsp cumin
-
1 tbsp lime juice

Vegetables that can be used - Amaranthus greens / ashgourd / ladies finger

Salt
Tadka ingredients

1/2 tsp mustard
-
1/2 tsp cumin
-
1/4 tsp fenugreek
-
2- red chilli
Method
- Soak channa dal for 4 hrs
- Grind channa dal, coconut, green chilli, ginger, coriander,cumin and turmeric into a paste
- Cook vegetables of choice
- Cleaned, chopped and steamed Amaranthus greens
- or dry roasted ladied finger with salt
- or cook the peeled and cubed ash gourd
- In a heavy-bottomed container, add some water, the paste, vegetables and cook till they boil
- Add buttermilk, salt, lime, red chilli, curry leaves and mix thoroughly.
- Wait for one boil and switch off
- Majjige Huli is ready
- In a small pan, add fenugreek and roast till they are half done.
- Next add cumin and mustard and roast till they splutter and switch off.
- Mix this to the sambar and enjoy.
