A classic Bengali recipe which is prepared with marinated brinjal slices, which are commonly known as 'Begun' in Bengali, that are fried and enjoyed alongside a meal. Begun Bhaja is a favourite of Bengalis and is super-easy to prepare. Though, popularly the eggplant slices are round in shape, you can also use the long brinjal and cut long slices. There are many variations to this simple dish. Easy to make and serve without much pre-preparations.


Ingredients

  • Big Brinjal: 1 no
  • Rice flour:2 tbsp
  • Chili powder: ½ tsp
  • Turmeric powder: ¼ tsp
  • Ajwain seeds: ¼ tsp
  • Rock salt: to taste
  • Cold pressed Mustard oil: 1 tsp

Method

  • Slice brinjal into thick slices.
  • Mix rice flour, turmeric, ajwain seeds, chilli powder and salt together.
  • Place the brinjal slices in the flour mix and press, so that the flour sticks to the sliced brinjal. Ensure all brinjal slices are coated on both sides with the flour mix.
  • Heat a tawa and brush cold-pressed mustard oil on the hot tawa and place the coated brinjal slices on the tawa.
  • Cook, covered for about 6 minutes on low flame.

  • Turn them over and cook uncovered for 6 minutes or until soft.
  • Serve with a meal as a side dish.

Wellcure Tip:

  • Cook using just one drop of oil on each side of the brinjal slice.
  • Once coated with flour the salt in the flour mix will help the brinjal to release moisture and help the flour stick well.
