Baked Spiral Potatoes with Vegan parmesan

This is a very popular snack, Twist potatoes or tornado fries are popular street food in South Korea. It is usually deep-fried or batter fried. A spiral-cut whole potato on a skewer brushed with various seasonings such as onion, cheese, or Date Syrup. It can be served as a snack or an accompaniment to a meal.

Adding the cashew parmesan just makes it more wholesome.


Ingredients

  • Potatoes: 4 nos
  • Cold pressed Oil: to drizzle
  • Chilli powder/chaat masala: to dust
  • Coriander leaves: 1 tbsp (chopped)

For Parmesan

  • Cashew nuts: ½ cup
  • Garlic: 2 cloves
  • Rock Salt: ¾ tsp

Method

  • Place all the ingredients for the parmesan in a mixie and pulse for short durations, taking care to get a coarse powder. Please note excessive blending will result in a lump.

  • Store in an airtight container. It can be stored for many weeks in a refrigerator.
  • Wash and scrub the potatoes.

  • Gently rub salt on the spiral potatoes taking care not to damage the cuts.
  • Drizzle oil on the potatoes.
  • Dust liberally with parmesan.

  • Place the skewers on a baking tray and bake for 25-30 minutes. Duration will depend on the thickness of the slices.
  • Once cooked sprinkle with chilli powder/ chaat masala and coriander and serve.
