Andhra Spice mix for vegetables - add the goodness of nuts & seeds

My daughter came back after a short stay at my sister’s house and couldn’t stop waxing eloquent about this magic powder that grannygaru, my sister’s mother-in-law , added to vegetables that makes them taste so sooooo good.

So I asked aunty to share the recipe of the magic seasoning that she adds to all vegetable preparations. It smells and tastes amazing. And you must try it to be able to enjoy the aroma and the flavours.

It has some of the most power packed ingredients. I only made a small change of adding mustard seeds to the mix as I have been reading a lot about the benefits of mustard.

Ingredients

  • Urad dal: ¼ cup
  • Chana dal: 1/8 cup
  • Sesame seeds: 1/8 cup
  • Grated Dry coconut/ copra: 1/8 cup
  • Peanuts: 1/8 cup
  • Dry red chillies: 5nos
  • Mustard seeds: 1 tsp
  • Hing: ¼ tsp
  • Rock salt: to taste

Method

  • Dry roast each of the ingredients, other than hing and salt, separately.
  • In a mixie grind urad dal, chana dal, red chilli, salt and hing to a coarse powder.
  • Add peanuts, dry coconut and sesame seeds to the coarse powder in the mixie jar and grind together.
  • Store in an airtight jar in the refrigerator and use as required.

Wellcure tips:

  • · Reduce the number of chillies to suit your taste.
  • · Take care while roasting dry coconut since it tends to burn very quickly.

Eating guide

  • · Food group: lentils and seeds
  • · Peanuts, dry coconut and sesame seeds are high in good fats.
  • · Lentils are a great source of proteins.
  • · Versatile condiment to be used in oil free preparations.
