Almond Milk (soaked version) - easy substitute for dairy

Trying to go off dairy, looking for milk substitutes? You may want to try this recipe! Almond milk works well as replacement for your regular milk. And it is simple to make at home.

Ingredients

  • Almonds: 1 cup
  • Water: 2 cups (plus more for soaking)
  • Honey: as required (optional)

Method

  • Soak the almonds overnight or for 6-7 hours. Soaking for longer durations gives creamier milk.

  • Drain and rinse the almonds thoroughly.

  • Put the soaked and washed almonds in a blender along with 2 cups of water.

  • Start by pulsing blender a few times to break up the almonds.

  • Now, blend continuously for 2 minutes. The almonds should be broken down finely. By now the water should be white and opaque.

  • Strain the almonds using a nutmilk bag or cheesecloth. Squeeze and press with clean hands to extract as much almond milk as possible.

  • If desired, add sweetener to taste.

  • Don't discard the leftover almond fibre. It can be added to smoothies or even your chapati dough.
  • Can be stored in an air-tight container in the fridge. Stays good for 2-3 days.

Eating Guide:

  • Food group: Nuts
  • Nuts & nut milk are great additions post meals at night time. Easy to combine with other food groups (except fruits), cashew milk can also be used to make yummy vegetable curries.
  • For nutmilks, use only one variety of nut; Don’t mix nuts.
